If you know me, you know that I’m low key obsessed with Giada De Laurentiis. When I first saw her cook this recipe, Rustic Vegetable and Polenta Soup, on her show years ago, I knew that I wanted to make it. I immediately went out to the grocery store, collected the ingredients, and made it. The flavor that came from this soup blew me away. It’s one of the most filling meals despite not having any meat, which I believe the polenta really helps with.
The biggest test with this recipe was getting my carnivorous husband to fall in line. No lie, this is his ultimate favorite soup and he requests it like once a month during winter.
What I love most about this soup is that it has minimal ingredients. I would say that this can fall under a 30 minute meal, and that is always a blessing during the week. This is one recipe that I’ve never altered or adjusted because it’s perfect just the way it is.
